Roast Prawn in broiler. Saute Garlic, finish with wine, shrimp stock, cream and chive butter.
Pan sear Sea Scallops, oven finish. saute shallots, add shrimp stock, juice of an orange, saffron, reduce, puree add butter and plate scallops over the sauce.
Sear veal shank. Slow braised veal shank in malbec wine, beef stock, carrots, onion, celery, garlic for 4 hours. Remove cooked vegetables and cook fresh mushrooms, carrots and baby reds in malbec braise. Serve and sauce
